Puff pastry, croissants, Danish pastries, and laminated breads are some of the most technically demanding products in a professional bakery. Precision Thickness Control
All three models in the Schmick sheeter range offer roller gap adjustment from 1mm to 35mm. Starting at 35mm and progressively reducing to 1mm, the sheeter produces dough of consistent, accurately controlled thickness across the full width of the conveyor. This is critical for croissants — where layer thickness determines both appearance and texture — and for puff pastry, where uneven rolling destroys the butter layer structure.

Reversible Action – the Professional Advantage
The forward-and-reverse conveyor operation is the feature that separates a professional sheeter from a basic machine. Rather than lifting and repositioning the dough after each pass, the operator simply reverses the conveyor direction, running the dough back through the rollers at the same or reduced gap. This saves time, reduces dough stress, and allows a single operator to efficiently manage the sheeting process. For laminated doughs that need many passes, this is an enormous practical advantage.
